Slow cooking works like magic to infuse the flavors of the various spices and herbs into the meat, making it unbelievably tender. This style of cooking, known traditionally as dum pukht, is not limited to biryanis but also includes korma, nihari, haleem, raan, other meat curries, and even dal.

How To Make Chicken Dum Biryani

Ingredients of Chicken Dum Biryani (2 Servings)

  • 350 gm chopped chicken
  • 20 gm garam masala powder
  • 10 ml water
  • 300 gm boiled basmati rice
  • 30 ml ghee
  • 1 cup wheat flour 

For Marination

  • 60 gm beaten yoghurt (curd)
  • 15 gm ginger paste
  • 1 gm mint leaves
  • 1 tablespoon coriander leaves
  • 15 gm garlic paste
  • salt as required
  • 10 gm thinly sliced onion
  • 7 gm red chilli powder

For Garnishing

  • 2 dashes saffron
  • 5 ml ghee or oil
  • 2 tablespoon onion
  • 3 tablespoon water

Step-1 Prepare the marinade

In a large mixing bowl, combine the chicken, yogurt (curd), fried onion, red chili powder, salt, coriander leaves, mint leaves, ginger and garlic paste, and coriander leaves. Combine all of the ingredients and marinate the chicken for about 2 hours. Add garam masala to the chicken after it has marinated.

Step-2 Cook the marinated chicken in oil

Melt oil in a handi over medium heat once the chicken has been marinated. Add the marinated chicken and fry for 2-3 minutes when the oil has melted. Then add water and cook the chicken over low-medium heat. Once the chicken is cooked, cover the vessel with a lid.

Step-3 Make the layers for Biryani

Now, add 70% cooked basmati rice to it. Add brown or fried onion, ghee, saffron water (soaked saffron in 2 tbsp water), and a little water above the rice layer.

Step-4 Cover the pan with the dough and seal it.

Knead a quick dough with wheat flour and use it to seal the handi before covering it with a lid. Allow the Biryani to sit in this state for 20 minutes. This will give the Biryani the perfect dum.
